Selected Recipes from In Praise of Apples

There is no question about chef Mark Rosenstein's love for apples after perusing his book, In Praise of Apples, or after indulging in the signature apple meal he prepared in April 2000 for a luncheon for New York City media that was sponsored by the U.S. Apple Association.

Rosenstein observed that apples are more than just something to eat – they have had enormous influence on many lives.

"The variety of apples and apple flavors is limitless, as is what you can do with an apple," Rosenstein said. "Blending their wonderful flavors with other foods creates some of the most interesting and tasty recipes imaginable."

Rosenstein's luncheon menu featured signature recipes highlighted in his book and at The Market Place, his restaurant located in scenic Asheville, N.C., nestled between the Blue Ridge and the Great Smokey Mountains.
