Apple-Cheddar Egg Scramble
Ingredients:
1 cup liquid egg substitute, thawed if frozen
1 teaspoon honey
1/2 cup grated unpeeled apples
1 tablespoon butter
1/4 cup cubed low-fat cheddar cheese
Directions:
- Lightly beat egg substitute with honey in a small bowl. Stir in the grated apples.
- Heat butter in a skillet; when butter foams, add the egg mixture and cheese cubes.
- Stir a few times until eggs are cooked, about 3 minutes.
Makes 2 servings.
