Spicy Pork & Apple Curry

Spicy Pork & Apple Curry
2 tablespoons vegetable oil
2 pounds boneless pork shoulder, cut into 2-inch cubes
2 onions, thinly sliced (about 3 cups)
3 fresh sweet apples, cored and sliced (about 4 1/2 cups)
2 tablespoons curry powder
1 tablespoon minced fresh ginger (from 1-1/2 inch piece) or 1 teaspoon ground ginger
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 cup chicken broth
1 cup frozen peas

Stovetop Method

In large non-stick skillet, heat oil over medium high heat. Working in batches, add pork; brown on all sides; remove pork and repeat. To skillet, add onions; cook and stir until almost soft, about 5 minutes. Add half of the apples, curry powder, ginger, cumin and cinnamon; cook, stirring occasionally 5 minutes longer. Return pork to skillet; add broth; simmer over low heat until pork is tender, 20 to 35 minutes longer. Just before serving, add peas and remaining sliced apples; simmer 2 minutes longer. Serve over rice or couscous with yogurt and chopped cilantro.

Slow Cooker Method

In large non-stick skillet, heat oil over medium high heat. Cooking in batches, add pork; brown on all sides; remove to bowl and repeat. To skillet, add onions; cook and stir until almost soft, about 5 minutes. Add half of the apples, curry powder, ginger, cumin, and cinnamon; cook, stirring occasionally, 5 minutes longer. Place pork and onion mixture in slow cooker; add broth. Cover and cook on low until pork is tender, about 6 hours and up to 8 to10 hours. Check liquid level, adding water if necessary. About 15 minutes before serving, add peas and remaining apples. Serve over steamed rice or couscous and garnish with yogurt and chopped cilantro, if desired.
